RECIPIES I LOVE

CHAPTER ONE


I promised to post a couple of recipies when I started my blog, so here are some things I really enjoy.  

Steaming Punch
1 package dry ice
2 bottles Gingerale or Sprite
Tub of raspberry sherbet
Large container of pineapple juice

Directions:  What sets this apart as something different is the constant fog coming from the punch bowl.  Put half the dry ice in a very large punch 
bowl.  Add half of the liquid ingredients, followed by round ice cream scoops of the sherbet.  The dry ice will cool the liquids almost instantly.  DO NOT overfill or it will spill out over the top.  After draining the dregs of the first bowl, repeat by adding the second half of the ingredients.  


Aloha Bread
This is a fantastic variety of good old-fashioned banana bread with a great kick.


Ingredients:
1 C butter
2 C sugar
4 eggs
1 C mashed bananas
4 C all-purpose flour
2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
20-oz can crushed, UNdrained pineapple
3/4 C chopped pecans (or walnuts)
1 C coconut

Preheat oven to 325º F.  Grease two large 8 x 4 inch loaf pans.  Set aside.  In large mixing bowl cream butter and sugar.  Add eggs, mixing well after each addition.  Stir in bananas.  In separate bowl, mix flour, baking powder, soda, and salt.  Add in 3 or 4 additions to wet mixture.  Mix well, but do not overmix.  This will cause a coarse texture.  Add remaining ingredients and stir until combined.  Pour into prepared pans.  Bake for 60-80 minutes, turning at least twice.  Yields two very large, hearty loaves.

Patrick's Tip:  When bananas start to go bad on the counter, don't throw them out.  Freeze them whole and when making banana bread or shakes, warm in microwave briefly to thaw, peel and use as normal.  The flavor remains and the ripeness of the bananas make them easier to work with, though they do feel slimy.  Don't let that or the color bother you.
